Very loosely based on this recipe for lemon mousse, I made some magic tonight. I had no fresh lemons on hand, nor any unflavored gelatin. So I substituted 3 TBSP lemon juice and 3 TBSP lime juice out of squeezie containers in my fridge, used 1 TBSP lime jello mix instead of unflavored, and sacrificed the zest. It still turned out outrageously good, as evidenced by the fact that I ate 5 of the 8 purported servings.
As anyone who knows me knows, I have an insatiable sweet tooth. Luckily I have also inherited some impenetrable tooth enamel from my dad, and I'm going to be married to a dentist, just in case.
