Baby Girls

A few weeks ago I helped throw a baby shower for my cousin and her sweet new baby girl.  (She spent her pregnancy in Alaska, so a pre-baby shower wasn't possible).  Man oh man, I tell you, I could go crazy with the girl thing.

I made my sister take a photo of me holding my niece, just so there is a picture of me holding a baby girl in existence.  It may be all I ever get on that front.

I think the shower went over pretty well, the food was awesome and the games were well received.  Best of all, I delegated better than usual so I was actually able to enjoy myself.  The only food item I put myself in charge of were these divine bacon-wrapped figs.  You want them; they are addictive.

Bacon Wrapped Figs

2 lbs dried figs or dates
1 lb bacon
1 Cup Basalmic Vinegar
2 TBSP butter
2 TBSP teriyaki sauce
toothpicks

  • Cut each strip of bacon in half lengthwise and then into quarters width-wise, resulting in 8 small strips.
  • Wrap each small strip of bacon around a dried fig (or date).  Secure with a toothpick if needed.
  • Place wrapped figs on a lined baking sheet.  Bake at 350 F for about 30 minutes, until bacon is cooked to your liking.
  • Meanwhile, bring basalmic vinegar to a simmer in a pot and reduce it by half.  Add butter and teriyaki sauce and simmer until butter is melted and ingredients are all incorporated. 
  • I placed the cooked figs in a crockpot on low and added the sauce to keep it warm until it was ready to serve.  When you pour the sauce over try to make sure it hits all the figs.  They are hard to "stir" with toothpicks in. 
  • Devour.
